DOI SHIBAZUKE HONPO was founded in 1901, I am the fifth-generation owner of this company with a long-standing history of over 100 years.
Shibazuke (purple leaf pickles), our signature pickle is a traditional delicacy that has been loved by the villagers of Ohara for over a thousand years. We particularly use local red perilla leaves and heirloom Kyoto vegetables, that are grown with the soil and climate of Ohara. We continue to challenge new possibilities of Shibazuke while preserving traditional methods.
Taking on new challenges while respecting old things is called “Onko Chishin”, but at DOI SHIBAZUKE HONPO, we have evolved this idea even further with the phrase "Onko Isshin" (learning from the wisdom of our predecessors and find a new way), which explores the possibilities of red perilla and Shibazuke to create a variety of new products.
